This is the pancake batter I used that I had people drive 200 miles to eat after the coach of a little league ball team ate them in the coffee shop where I worked and begged for the recipe.....and since it was mine I gave it to him...and my two kids loved them on Sunday mornings along with my neices and nephews....

Linda's Pancakes

2 to 3 cups of your favorite pancake mix (I use Krusteaz)
1/2 stick butter (butter is best here) melted
4 eggs
milk NOT WATER
1 TBLS Vanilla

While your griddle or grill is heating :
Start with pancake mix in a good size bowl, in a smaller bowl crack all four eggs and whisk them before adding them to mix pour and stir milk until you reach your perfect consistency briskly whisk in melted butter then ADD that secret ingredient.....the vanilla (which I thought everybody used) My favorite are dollar sized and when I say dollar sized I mean silver dollar size.... use a smaller size tablespoon to spoon batter onto griddle....and for little kids I love to make them Mickey Mouse cakes. Serve with Butter and an assortment of syrups and/or jams along with assorted breakfast meats and eggs for a wonderful and charming family Sunday morning breakfast or Brunch. Keep warm on a oven proof platter in a low oven depending on how many you have for breakfast...is also wonderful for holiday get togethers...


Also used for waffles:

With waffles you can really have fun by adding Bacon pieces, any kind of berry or assortment of berries, blueberries are wonderful.

Always remember mama said, " Don't play with your food." But she didn't say anything about your recipes.
